CCA - Club De Cuisine
Overview:
  • Target Students: Year 1 and Year 2
  • Food Preparation Module and Pastry and Baking Module
  • Duration: Once a week / 2 hours

For the ISC Food Preparation module, year 3 and 4 students go through a comprehensive 20 week of basic foundation cooking and lunch operation component. They are taught the fundamentals of cooking and kitchen management with the hope that they can attain the professionalism of a chef in the Hotel Industry.

Statistic has proven that a structured education yields excellent results, which will help the students to gain the honorable title of a “Professional Chef”. Example of chefs that have surface recently in the gastronomical world are Gordon Ramsey, Jamie Oliver, Mario Batali, Daniel Boulud, Wolfgang Puck, Saint Santamaria, Guy Savoy, Tetsuya Wakuda and our very own local celebrity, Justin Quek and Sam Leong.

To further nurture, enhance and provide a more wholesome tradition in the teaching of culinary and pastry arts, the club de cuisine enable our NLS students to perfectly master the fundamental techniques and most importantly the continuity of the enrichment in their learning, ultimately, we aim to have them in the “marketplace” who know how to roast, grill, prepare proper and sumptuous meals and be ready to address all the specific needs of their profession.

Objectives:

The club will serve as a platform for the students to progress with what they have already been equipped in the food preparation and pastry modules to further prepare them for their chosen career paths.

The “cuisine club” will enable them to rediscover a greater playing field like research and development of different varieties of cuisine, food ingredients, marketplace, food trends, recipe compilation, menu management, diet management and recipe book development.

A learning journeys to related and relevant areas like retail F&B areas, hotels, restaurants, eating establishments, gaming resorts, food processing plants, hospitals, airlines, cruisers, trains and farms will certainly give the students the added edge to enrich their understanding of the world of FOOD! Renowned chefs will be invited to our school to showcase to the students the latest trends and developments of happening in the culinary arts.
